Course Description

This course is an examination of food - how we experience it, and the science of gastronomy - combined with environmental, social, and political dynamics of the food system. We will pay particular attention to the intersection of food and power through topics such as GMOs and seed sovereignty, elitism and labeling, and food as a tool of war, oppression, and control through history and today.
